Tomatoes have never been my favorite food, but I find them surprisingly good when combined with fresh basil, garlic, olive oil and balsamic. I have been making bruschetta for a long time and always look forward to making it in the summer with plump ripe tomatoes in a variety of colors. This is a simple recipe and one of my favorites to throw together for an appetizer or quick mid day summer snack.
R E C I P E
- 1 baguette, sliced on a diagonal
- 1 pint yellow grape tomatoes
- 1 pint red grape tomatoes
- 4 cloves of garlic
- Handful of basil, sliced lengthwise
- 1 tablespoon balsamic
- 1 tablespoon olive oil
- salt and pepper
You can use butter in a skillet to grill the bread, but I prefer to drizzle with olive oil, a squeeze of fresh lemon juice and salt and pepper. I put this in the oven at 300 degrees for approx 5 mins. I check it often making sure the bread is getting crispy but not too hard.
Slice tomatoes and basil lengthwise and combine all ingredients in a small bowl. Then carefully scoop mixture onto toasted bread. Top with a small drizzle of balsamic and cracked black pepper. So quick and easy!
