Blueberry Peach Galette

Between spending all of my free time outdoors and barbecuing as much as possible, I really am trying to savor the final weeks of summer. One of my favorite parts of summer is the abundance of fresh fruit and local farm stands. I wanted to make a dessert with a combination of two perfectly ripe and complimentary fruits. A rustic galette just reminds me of summer. They don’t have to be pretty or perfect, just a simple delicious dessert. The intense flavor and paring of sweet fruit and crunchy crust is all that matters.

Blueberry Peach Galette Recipe

  • 1 stick of cold butter
  • 1 1/4 cup flour
  • 1/4 cup ice water
  • 2 peaches
  • 1 pint blueberries
  • 2 tbsp. granulated sugar
  • Squeeze of lemon juice
  • 1/2 tbsp. vanilla extract
  • 1/2 tsp. cinnamon
  • Place flour in bowl of a food processor, cut butter into cubes, slowly add to food processor and combine until a chunky sand like texture appears. While running, add water until ball of dough forms.
  • Gently knead the dough and shape into a disc form, refrigerate for at least 30 mins.
  • Preheat over to 375 degrees

    It is one of the most summery desserts and so easy to make!
