As the weather gets cooler, my urge to stay inside and bake only intensifies. I have made a variety of baked donuts in the past, but one of my favorites is the fool proof cinnamon sugar mini donut. They are soft, layered with flavor and it is hard to eat just one. I like to bake my donuts instead of frying them, which requires you to get a special pan, but it definitely feels a little healthier and less heavy. These are very easy to make and I am excited to continue baking more variations throughout the fall and winter.
Mini Cinnamon Sugar Baked Donuts (yield approx. 18 donuts)
Cinnamon Sugar Topping
Preheat the oven to 350 degrees. Spray two donut pans with cooking spray and set aside. I use these.
In large bowl sift flour, add sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the mixtures together until well combined.
Fill a pastry bag with batter (or spoon it) into the prepared baking pans, filling each one until almost completely full. Bake for 15-17 minutes, until a toothpick comes out clean. Allow to cool for approx. 5 minutes on a cooling rack.
Combine the cinnamon and sugar together in a bowl and melt the butter in a separate bowl. Once donuts are slightly cooled, dip each one into the butter and then roll around in the cinnamon sugar.
