Just like my love for mac & cheese, my love for grilled cheese runs deep. When I would come home from college on various breaks all I wanted was my moms famous grilled cheese. She would make mine with mozzarella and basil and it’s a combination that I still crave all the time. I have found grilled cheese has come a lonnng way from white bread and kraft singles and they are a great opportunity to layer complimenting flavors. I came up with this grilled cheese by combining a few of my favorite things such as caramelized onions and sweet pears for a perfect fall treat.
Grilled Cheese with Caramelized Onions and Sliced Pear (yield one)
2 slices large sourdough bread
1 tbsp. butter
6 thin slices white cheddar cheese (depending on how big the bread is)
1/3 sweet onion (caramelized, see below)
Apple Maple Onion Jam (this is the best thing ever!)
1/2 ripe Bosc pear (sliced thinly)
Directions: Start by caramelizing the onions. I love this link which has step by step photos, making it really easy to follow. Once onions are done set aside. Melt butter on a grill pan and lightly toast bread until it is a very light golden brown. Remove the bread and spread jam on both slices. Layer on slices of cheese, then the pear, top with caramelized onions and the second piece of bread. Bring the sandwich back to the grill pan and cook until cheese is melted, flipping once. I like to use a cast iron grill press to get everything to stick together nicely. Serve hot.
