Clean Blueberry Oatmeal Muffins

I am always on a mission to eat healthier especially as I have gotten older. When I am eating unhealthy I can feel it in my mood, see it on my skin and overall tend to feel a lot more tired. There are some foods that I could never cut out of my diet, but I try to eat all things in moderation. You all know by now how much I love baking, so I am hardly eager to cut baked goods out of my life, but I have been looking for ways to modify my favorite recipes to include better ingredients. I love making blueberry muffins on a Saturday morning and this past weekend I made them to include some new healthier options.

Clean Blueberry Muffin Recipe 

  • 2 Eggs
  • 1/2 tsp. Vanilla Extract
  • 1/3 Cup Honey
  • 1 Cup Coconut Milk
  • 1 tsp. Lemon Juice
  • 1/2 cup Coconut Oil – Melted
  • 1 1/2 Cups Whole Wheat Flour
  • 1 1/2 Cup Oat Flour
  • 1/2 cup Old Fashioned Oats
  • 3 tsp. Baking Powder
  • 1/2 Tsp. Cinnamon
  • 1/2 salt
  • 1 1/4 cup fresh blueberries

 

Directions 

I don’t use muffin papers and instead to just pour the batter directly into my favorite pan (sold out, but similar here). Preheat oven to 375 degrees.

In the bowl of a mixer combine the coconut milk and lemon juice, let sit for about five minutes. Add the honey, vanilla, eggs and coconut oil and whisk until well combined. In a separate bowl combine the whole wheat flour, oat flour, old fashioned oats, baking powder, cinnamon and salt. Add half of the dry ingredients into the wet ingredients, mixing well after each. Once everything is mixed, gently fold the blueberries into the batter.

Use a large spoon or ice cream scoop to divide batter evenly among the muffin pan. Sprinkle lightly with oats. Bake for 20 minutes or until the tops are a nice golden color.
