Lemon Olive Oil Cakes

The weather has been a bit all over the place lately and we are having more rain much later in the year than normal. I can’t complain because it is making the hills around Marin the prettiest shade of green, but it does have me longing for sunny Spring days.

I have been trying to make a habit of going to the Farmers Market on Thursday mornings to pick up produce and fresh flowers. This past week I spotted the prettiest edible flowers and knew I wanted to work a dessert around them. I only used them as garnish but the colors instantly made me think of lemon and olive oil. I love this easy citrus cake and decided to make two individuals because they make the cutest gifts!

Lemon Olive Oil Cakes (yield 2 small loafs)

1 ½ cup granulated sugar

3/4 cup extra virgin olive oil

3 large eggs, room temperature

½ cup milk

1 tbsp. sour cream

½ teaspoon salt

pinch of nutmeg

2 teaspoons baking powder

1 tbsp. vanilla extract

2 tbsp. fresh lemon zest

fresh juice from two lemons

2 cups all purpose flour

Preheat oven to 350 degrees.

Prepare baking dishes by lightly oiling with cooking spray, set aside. Combine all ingredients in a bowl and whisk until well combined. Leave the flour to the last step and lightly fold in, do not over mix.

Separate batter evenly into prepared pans until 3/4 of the way full. There may be a little bit of batter left over, but thats ok. It is better to have that than the pans to overflow. This recipe can also make one large pound cake if you do not have mini pans.

Bake for 30 – 40 minutes or until edges begin to brown and center is cooked through. Because of the olive oil the cake will naturally be a little spongier, but you don’t want to leave it in too long to dry out. Once removed from oven, let cool in baking dishes on a wire rack before trying to remove. Dust with powdered sugar and top with edible flowers if desired.

*Unfortunately my gold trim dishes from Williams Sonoma are no longer available, but I also love these and these.
