Easy Roll Out Sugar Cookies

When it comes to baking, I am a big fan of the simpler, the better. Around this time of year I tend to make a lot of cookies, but some of my favorites are the easiest with no real decoration and a quick clean up. Chewy sugar cookies have long been one of my go to’s, but I am not a big fan of royal icing or a ton of sprinkles so I don’t even decorate mine and simply top them with some crystalized sugar sprinkles to bring in a bit of texture. They don’t look like anything fancy, but always taste delicious and take very little time to make!

Easy Rollout Sugar Cookies 

2 sticks (or 1 cup) of butter

1 cup granulated sugar

1 egg

2 tsp. baking powder

1 tsp. vanilla extract

2 3/4 cups flour

Preheat oven to 375 degrees. In the bowl of a mixer cream together butter and sugar until light and fluffy (about 3 minutes) Beat in egg and vanilla. Then mix in flour and baking powder slowly until well combined. Divide dough in half and place on floured surface, roll out with a rolling pin until the dough is about 1/8″ thick. Use any cookie cutter (I love this biscuit cutter for a classic shape and these stamps for the holidays) Bake for 4-6 minutes or until light brown, I like mine a little crispy on the edges so I tend to bake them on the longer side, but every oven varies. I also love to pair some fresh baked cookies with a hot cup of apple cider or coffee and these plaid mugs make everything feel more festive!
