Brown Butter Madeleines

Madeleines are one of my favorite go to easy items to bake. They require few ingredients and are pretty hard to mess up unless they get burned. I have shared one of my favorite combinations in a past recipe, but this is just a classic madeleine with browned butter to give it an extra layer of flavor. I love that madeleines can be eaten as a morning pastry of an after dinner dessert and they they always pair perfectly with a hot cup of coffee.

Brown Butter Madeleine Recipe

  • 1 stick melted butter, browned (see below)
  • 3 eggs
  • 2/3 cups of sugar
  • 1 tsp. vanilla extract
  • 1 cup flower
  • 1/4 cup cornstarch
  • 1/2 tsp. baking powder
  • 1/4 tsp salt
  • 1/2 tsp. ground cinnamon

Preheat oven to 350 degrees. Grease 2 madeleine pans and set aside. Brown the butter in a small saucepan over medium heat, swirl the butter around the pan until it starts to brown. You want the coloring the be light brown so the butter does not burn. Once the butter is ready combine with all the other ingredients .

Lightly brush the madeleine pans with melted butter and a small dusting of flour. Scoop the batter into the pans, filling each opening almost completely. Bake for 10 – 12 minutes or until edges are lightly browned. While madeleines are cooling dust with a light sprinkling of powdered sugar.
