I am always looking for ways to eat lighter as the weather gets warmer and in order for me to eat really healthy I need my meal to be layered with flavors. An arugula and pear salad with a lemon shallot dressing is one of my favorite summertime dishes because it is so easy to make and despite its simple ingredients, it is very filling. The pairing of peppery arugula, sweet pears and crunchy walnuts is kind of unbeatable on a warm summer night!
Pear & Arugula Salad
- 2 bunches arugula
- 1 ripe pear, thinly sliced (I love bosc and asian pears)
- 2 tbsp. chopped walnuts
Lemon Shallot Dressing
- 1/2 shallot, minced
- Half a lemon, juiced
- 3 tbsp. 0live oil
- pinch of salt
- pinch of pepper
Whisk all ingredients together and drizzle over salad
