White Cheddar & Thyme Popovers

Even though I am trying to eat less bread, I will always have a weakness for light and crispy popovers. I love that they can be made a ton of different ways and served with a meal or eaten on their own. For this recipe I layered a classic popover with mild white cheddar and thyme, the flavor pairing is one of my favorite combinations. Popovers have their own unique pan that gives them their height and at around $20 I highly recommend purchasing one. I use mine a lot more than I thought I would!

White Cheddar & Thyme Popover Recipe (yield 6)

  • 3 large eggs
  • 1 1/2 tbsp. melted butter (plus 1 more tbsp. for greasing pans)
  • 1 1/2 cups flour
  • 1 1/2 cups of milk
  • 3/4 tsp. kosher salt
  • 1/2 tbsp. dried thyme
  • 1 tsp. dried oregano
  • 3/4 cup grated white cheddar cheese

Preheat oven to 425 degrees.

Melt 1 tbsp. of butter and brush a popover pan making sure you cover each cup. If you don’t have a popover pan you can use a muffin tin, but they not be as tall.

Combine all ingredients by whisking together in a large bowl and carefully pour into prepared pan. Bake for thirty minutes and do not open the oven while baking (or the popovers will shrivel). These are best served very hot so once they have cooled for about three minutes, carefully remove them from the pan and serve.
